Classic Grilled Cheese
After having a spring like day this past Saturday, we are on to a cold rainy Wednesday.
There is nothing better on a cold rainy winter like day than some hot comfort food.
Simple is Often Better
It’s funny how sometimes the simplest of foods will take you back to a great time in your childhood. One of the best for me is my Mom’s grilled cheese.
After a great weekend, we had a very rainy and bone chilling afternoon. What better than Grilled Cheese and soup.
It’s funny when we go to West Virginia to visit one of my sons requests is for Nana to make hime a grilled cheese.
He says her’s always tastes better than mine, and I have to agree, nothing is like Mom’s grilled cheese.
Crispy, Cheesy Greatness
With only 3 ingredients, this could not be a more simple comfort food.
When I want that sandwich from my childhood my go to bread is white sandwich bread.
Growing up wonder bread was our sandwich bread, toast, hot dog buns and hamburger buns.
Next comes the mayonnaise, now I grew up with Helman’s but since moving south I now use Blue Plate. Use whatever mayo you like.
Start with getting a cast iron pan onto the stove over medium heat. Give the cast iron time to come up to temperature.
Spread mayonnaise onto one side of the bread. Be sure to coat the entire slice from side to side.
Place the side with the mayonnaise down onto the cast iron pan. Yes I said down. I love mayo, so I then spread it on the top side of the slice that is on the pan.
Next add the cheese. I like mine cheesy so I go with two slices over lapped so there is cheese all the way to the edge.
Then add the top slice of bread and spread mayonnaise on the top, making sure to coat the entire slice from side to side.
Cook until browned, about 5 to 6 minutes turn it over and cook on the other side about 2 -3 minutes.
Remove from the grill and slice it up and enjoy. My mom always cut across, so that is the way I like mine. If I am making one for my son he likes his diagonal.

Ingredients
- 2 Slices White Bread
- 2 Slices Kraft American Singles
- Mayonaise
Instructions

Heat a cast iron Skillet over medium heat on the stove.

Spread mayonnaise onto one slice of bread, ensure that you cover the entire slice from side to side.

Place the bread mayonnise side down onto the cast iron skillet.

Add mayonnaise to the top of the bread on the skillet.

Top with two slices of cheese overlapping. this ensures cheese from side to side and extra cheese in the middle.

Place the other slice of cheese on top and spread mayonnaise on the top, ensure to cover from side to side.

Grill until the bottom is browned, about 5 minutes on the first side. Flip the sandwich over and grill the second side about 3 minutes.
